The extensive oxidation and minimal roasting offer a flavor profile that has the rich, density of Small Leaf Black Tea while still maintaining enough freshness to give it complexity and vibrancy. Sweet, ripe fruity notes balanced by mildly astringent nutty/woody tones. Add to this an unmistakeable honey essence in both the aroma and on the palate. It's a proper Oolong in its complexity, and a signature bug-bitten batch of tea.

The truth is, our favorite batches of traditionally made Taiwanese Oolongs have come from this community of family owned farms in the foothills of Phoenix Mountain in Lugu Township. We've been told it's the soil, and the mid-elevation climate that is most conducive to making a traditionally made Oolong Tea. But in our own perception, it's the expertise that comes from generations of tea making that results in the character of tea that we love the most.

We recently visited Mr. Liu when we hosted a visitor from Italy who was keen on experiencing the local tea culture. Our guest was truly elated to be served tea by a true artisan of the trade. Mr. Liu served us three different teas that were all locally harvested this past spring. They varied only in their degree oxidation and roasting. And the one that was sufficiently oxidized, but only lightly roasted, immediately impressed us.

With the first brew poured off, the leaves offer a distinctly roasted character with nutty, fruitwood fireside notes. After the second brew the aroma of the brewed leaves turns a bit fruity, with a warming spice sweetness reminiscent of pumpkin pie. The tea has a roasted flavor upfront, followed by a sweetness like grilled fresh corn. Then it moves into a more balanced, rich, complex character and smooth texture. The second visual assessment of competition teas is the purity of color and transparency of the brewed tea. It should be clear and luminescent.

This month's batch of tea being shared with the Eco-Cha Tea Club was entered into the winter 2017 Nantou County Tea Trade Association's Dong Ding Jin Xuan Tea Competition, and received the Gold Medal Award. This award ranks within the top 5% of all entries. This competition has been in existence for almost 25 years. It began with the development of Jin Xuan tea production in the early 1990's.

Dong Ding Tie Guan Yin Tasting Notes | Eco-Cha Tea Club

This month's batch of tea being shared with the Eco-Cha Tea Club was made by Mr. Su — an 80 year-old artisan of traditional Dong Ding Oolong Tea. He planted a plot of the Tie Guan Yin strain in his backyard several years ago, and this is the second time we've sourced this tea type from him. Mr. Su is our favorite representative of traditionally made tea in Taiwan, and it brings us a special kind of joy to be able to share his tea with our tea club members.

This batch has a particularly sweet character, with slightly tangy, fruity notes and a pleasantly clean lingering aftertaste. It has just enough of that cured, almost fermented character that makes it reminiscent of a traditionally made Tie Guan Yin Oolong. But given that it was only roasted once, it maintains a mild flavor profile similar to a Hong Shui Oolong.

Our monthly missions to find exceptional singular batches of tea to share with the Eco-Cha Tea Club have led us full circle back to where we were exactly 2 years ago — in the workshop of our favorite elder artisan Mr. Su. On the day we stopped by and snapped the photo above, we found him tasting his batches of tea one last time before entering them into the world's largest Oolong Tea competition, where he has won Champion Prize. But we were visiting him with another type of tea in mind — the tea we sourced from him and shared with the Eco-Cha Tea Club in January 2016, which we named Dong Ding Tie Guan Yin Oolong.

The roasted character of this tea combined with the "bug-bitten effect" is what makes it unique. It's difficult to describe the flavor profile accurately. Concubine Tea is also known to vary subtly from brew to brew — which makes logical sense. If you think about it, it's inevitable that each leaf will be affected differently by the Leafhopper. So it really depends on which leaves end up in your teapot on a given day! So take the time to notice the variations from brew to brew. Get familiar with this batch, and learn how to brew it to to the best of your liking. Concubine Tea is by definition unique, from batch to batch and even from brew to brew. Enjoy the journey!

As a singular tea type, we just keep coming back to a well made Dong Ding Oolong for one of the most reliably satisfying character and flavor profiles. And this batch was selected and roasted by a friend who happens to be the most respected professional competition player and master roaster we know. Due to his continued success in virtually all of Taiwan's competitions within the roasted Oolong category, he has been invited to conduct seminars for tea makers from all over Taiwan. He is a leading professional in the art of roasting tea. And we are lucky enough to be offered his award winning batches to share with our Tea Club members.

Beyond the fact that the standard of quality in this competition represents our personal favorite — Traditional Dong Ding Oolong, we determined this batch especially worthy of sharing based on its source. The same batch of freshly made tea was divided into several smaller batches and roasted separately. The subtle differences in the outcome of each separately roasted entry batch were tasted by leading professionals and ranked at 4th place, top 2%, and top 8%. We see this as testimony to the decisive finesse involved in the roasting process. On a given day, each roasted batch from the same harvest will have a different outcome. And it is  the skill of the master roaster to determine how to navigate each individual roasting process.

This batch of tea was sourced from our friend and tea mentor who is one of the most successful competition players in the industry. He participates in all of the significant competitions in central Taiwan and consistently attains the highest awards. Eco-Cha Tea Club's Batch #1 was also from this source. And this spring he achieved 5th place out of 6,441 entries of that same competition that Batch #1 was entered in last year. This month's batch was entered into the Nantou County Tea Trade Association's Dong Ding Jin Xuan Tea Competition, and received the Gold Medal Award.
