Taiwan High Mountain Tea Overview Winter 2021 | Eco-Cha Teas
We taste tested our three new batches of winter High Mountain Oolong Tea -- Shan Lin Xi, Alishan, and Li Shan. We can see the difference in the oxidation levels of the tea leaves in the coloration of the brewed tea. We can see a higher degree of oxidation in the Shan Lin Xi and less oxidation as we move to the Li Shan.

He inherited his family tea farm and factory 20 years ago, and has persevered in creating a sustainable production of organic tea by developing natural tea farming methods on his own.
Eco-Farmed High Mountain Oolong | Summer 2021 Harvest
We have become close friends, and this is a unique connection in our 25 years of involvement with tea producers in the local Taiwan tea industry. This farm is a rare resource, given its environment and micro-climate. The owners have faced many challenges and only in the last few years have developed their organic farming to a stable situation. Now, with some support and guidance, we believe they will soon be producing some of the best organic tea in Taiwan!
Shan Lin Xi High Mountain Oolong Summer Harvest
We brewed our spring batch of Shan Lin Xi High Mountain Oolong Tea alongside the freshly picked summer batch to observe the differences between these two consecutive harvests from the same source. These two batches exhibited the classic seasonal traits of spring and summer high mountain tea.
Spring 2021 Traditional Dong Ding Oolong Making
Our friend chose to only use one pot, or tumble heater, for the fixing stage. This would make it a slower and more relaxed tea making session, while allowing the leaves that were picked later in the day to oxidize more — resulting in a more uniformly cured batch of tea.
Tea Farmers Receive Subsidies For Drought In Taiwan
The Chairman of Taiwan's Department of Agriculture made an appearance in our neighborhood (Zhushan) to conduct a field survey of the impact drought conditions have made on crops of spring tea. The Tea Research and Extension Station reported that yield is down 30-50% from average at lower elevations, and higher elevations are not much better.

We are very happy to finally be able to offer the pre-modern version of Dong Ding Oolong Tea! We've waited for years to source this local traditional specialty from our friend who simply has more demand than supply from his family plot of tea in Phoenix Village in Lugu Township, Taiwan.

In the end, each seasonal crop has its own unique combination of contributing factors that give it a slightly different aromatic and flavor profile than other seasons. We really enjoy experiencing these seasonal variations from the same plot of tea processed in the same basic way. We encourage our High Mountain Oolong fans to follow suit in order to more fully understand this type of tea and how it can vary from season to season.
Red Jade Black Tea Upgrade
Our source of Red Jade Black Tea (Tai Cha 18) is a success story in progress. And his most recent advancement in his operations has been to optimize the quality control of his Red Jade production. He is only using his prime summer produce for making his Red Jade Black Tea, and designating the early and late harvests for Ruby White Tea making. He has also begun to be more precise in timing of harvests, and picky (no pun intended!) about the selection of hand-picked leaves to reap only the proper degree of maturity in the new leaf growth.
Singular Batch Traditional Oolong Tea | Labor Of Love Oolong
This very small fall harvest of naturally cultivated Oolong leaves was painstakingly processed by a father and son team who are top representatives of their local tea industry. The most inspiring fact is that the son is wholeheartedly inheriting his family's tradition, and this small batch of tea is testimony to that.
The name "Hong Shui (Red Water) Oolong" has been a buzzword in Oolong circles in recent years. But the tea makers who have inherited their local tradition say that this is simply a new name for tea processed like their grandfathers taught them. It used to just be called "Oolong Tea"!
Taiwan Tea Picking Competition
The Lugu Farmers' Association organized a groundbreaking event in an effort to maintain a high quality standard of hand-picked tea in Taiwan. After developing the world's largest Oolong Tea competition (est. 1976), and nine years of producing the Nantou Global Tea Expo, our mentor Tony Lin (林獻堂) said that this is his latest effort to preserve the quality of Oolong Tea in Taiwan.
Harvesting Loose-Leaf Tea By Machine VS. By Hand
The marketing trends of modern tea production in Taiwan have, for a number of reasons, resulted in a clear discrimination of the quality and value of tea that is harvested by machine compared with tea harvested by hand. These initial reasons have been conveyed to foreign purveyors of Taiwanese teas, who consequently represent the product as such today. Much less conveyed is the fact that tea production methods have evolved significantly in Taiwan in recent decades. This calls for a current assessment of the state of the industry today.
